Cooking Instructions
1. Season the Chicken
In a bowl, season the chicken with garlic paste, mixed spices, pepper mix, and salt. Allow it to
marinate for 15–20 minutes for deeper flavor.
2. Cook the Chicken
Place the seasoned chicken in a pot with a little water and cook until tender. Set aside the stock
for later use.
3. Build the Garlic Base
Heat oil in a pot over medium heat. Add chopped onions and sauté until soft and translucent.
Stir in the garlic paste and cook gently until fragrant.
4. Develop Flavor
Add pepper mix and chilli pepper flakes (if using). Pour in some of the reserved chicken stock
and allow to simmer for 10–15 minutes, letting the flavors blend.
5. Combine & Simmer
Add the cooked chicken back into the pot. Simmer for another 10 minutes until the stew
thickens and the garlic flavor is fully absorbed.
6. Serve
Adjust seasoning if needed and serve hot with rice, yam, plantain, or swallow.
