3 tablespoons
fresh catfish or stockfish (washed and cut)
500g
beef or goat meat (optional)
300g
Onion (chopped)
1 medium
Ground Banga spice mix (or fresh palm fruit extract if available)
2 tablespoons
CityFarm Mixed Spices
2 tablespoons
Ground crayfish
2 teaspoons
Scotch bonnet peppers (blended, optional)
2–3
Cups water or stock
2–3
Salt to taste
Scent leaves (optional, for garnish)

Method

1. Prepare the Meat & Fish
2. In a pot, boil beef or goat meat until tender. Add catfish or stockfish and simmer gently. Reserve the stock for later use.
3. Heat the Palm Oil
4. In a separate pot, gently heat CityFarm Organics Palm Oil over medium-low heat. Avoid overheating to preserve nutrients.
5. Build the Flavor Base
6. Add chopped onions and sauté until translucent. Stir in Banga spice mix and ground crayfish. Cook for 2–3 minutes until aromatic.
7. Add Stock & Protein
8. Pour in reserved meat/fish stock gradually. Add meat and fish back into the pot. Stir gently.
9. Simmer & Adjust
10. Add blended Scotch bonnet peppers (optional) and CityFarm Mixed Spices. Simmer for 10–15 minutes, allowing flavors to meld and palm oil to deepen the color.
11. Finish & Serve
12. Add scent leaves if using. Adjust salt to taste. Serve hot with pounded yam, fufu, rice, or your preferred starch.
